This unique recipe is cooked in an iron kadhai and served with hot, steaming rice. It’s one of the most nourishing and health-friendly dishes you’ll find in the state.
Kafuli Recipe | Uttarakhand Cuisine
Ingredients:
- 2 bunches of spinach
- 1 bunch of fenugreek leaves
- 3 green chilies
- 2 tablespoons of oil (preferably mustard oil)
- 1 teaspoon cumin seeds
- A pinch of asafoetida
- 2-inch piece of ginger
- 5 cloves of garlic
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon chili powder
- 1 tablespoon curd
- 1 teaspoon rice flour
- Salt to taste
Method:
- Wash and chop the spinach and fenugreek leaves.
- Boil the spinach, fenugreek leaves, and green chilies with half a cup of water until tender.
- Grind the ginger and garlic into a paste.
- Puree the boiled greens in a blender.
- Heat oil in a pan, add cumin seeds, and when they begin to splutter, add the ginger-garlic paste and sauté for a few minutes.
- Stir in the green puree, turmeric powder, coriander powder, salt, and add water as needed to achieve your desired consistency.
- Let it cook for a while.
- Mix the rice flour with a little water to make a paste and add it to the mixture.
- Blend the curd well and stir it in.
- Let the Kafuli simmer for a few more minutes.
Your Kafuli is ready to serve! Enjoy it with phulka or chapati.
